Vegan Chocolate Chip Cookies
Total Time: 12 Minutes
Yield: 15 - 17
Ingredients
2 Cups of Wholemeal flour
1 Tsp baking soda
1/2 Tsp salt
1 cup brown sugar
1/2 cup vegan chocolate ( you can you a vegan chocolate bar just make sure to chop it up or chocolate chips)
4 Tbsp milk of choice, plus more if needed
4 Tbsp oil
1/2 Tsp pure vanilla extract
Instructions
Combine all dry ingredients in a bowl, then stir in wet ingredients to form a dough. The dough will be dry at first so just keep stirring until a cookie-dough texture is achieve. If your dough is still dry add 1-2 Tbsp of extra milk of choice.
Form the dough into a ball then refrigerate for 2 hours or until the dough is cold.
Once dough is cold preheat the oven to 170°c. Form dough balls using about 2 heaped tsps of dough. Then place on a greased tray, press down on dough ball to achieve your desired size and shape., leave enough room between each cookie to allow for spreading. Bake for 9 minutes and then flip cookies over and bake for 3 minutes. Let cool for about 3 minutes or just each them straight off the tray like I did.
You can also choose to freeze the dough balls just make sure they are in a airtight container. ( Can freeze up to 3 months).
